Fruits of our Labors

Salsa on the left, Spaghetti Sauce on the right
We have really enjoyed all the vegetables from our garden this summer. We got a lot of zucchini, cucumbers, green beans, but especially tomatoes. I planted one beef tomato plant, one Roma tomato and nine regular tomato plants for canning. Our tomatoes went crazy, and we had a lot. I made 10 pints of salsa with the Roma tomatoes and 19 pints of spaghetti sauce with regular tomatoes. We are still getting plenty of tomatoes, but I am now sharing the wealth. After two days of canning, I don't want to do anymore. I think we will be set on salsa and spaghetti sauce for a while. I just had to share, because this is the first time I've ever made anything like this, and I was quite pleased with how they turned out.

Way to go! They look great. With the addition of your tomatoes I just canned six pints and three quarts of tomatoes today to use in soups, chilis, casseroles, etc. Thanks for the additions! My three little plants are now just about done. There are only maybe 10 small tomatoes left. If they don't freeze in the next two nights. Ugh!
